25th Anniversary Trip, Day 4

Today we stopped on St. Lucia.  It was our Second time here.  We took a private tour of the southern end of the island including the Pitons, a hot sulfur spring and swimming in a warm waterfall heated by volcanic activity nearby.  It was a short day in port but we had a nice time.

When we got back we found our room decorated for our anniversary.  One of the couples at our table was celebrating their 70th anniversary!! Nice folks.

25th Anniversary Trip, Day 3

Today, since we didn't arrive at the St. Martin until 10:00am,  we started in the spa.  Peggy had a facial and I had a massage (Peggy coerced me).  After a quick breakfast we hopped off the boat for some casual shopping while waiting to meet our tour.

We took a catamaran cruise down the coast a bit where we past the airport.  The runway is only 50 feet from the beach and the planes come in so low they occasionally take out the 4 foot fence at the end of the runway!  It huge sport to stand on the beach as the planes take off and land.

We did some snorkeling in a spot where there was sunken helicopter and old submarine.  It was a gorgeous day on the water!

25th Anniversary Trip, Day 2

Today we spent a lazy morning around the hotel.  Peggy went for a swim after breakfast and I spent the morning exploring the hotel and taking pictures.
Atrium Sitting Area

The artist who owns the hotel, Jan d'Esposo, is a sculptor and painter.  Her work fills the hotel, hence the name 'The Gallery Inn.'

The hotel is quite eclectic and has a lot of cozy and inviting places to relax, both indoors and out.

At about 2:00 we made our way to the ship and boarded. No lines, no hassles.  It was great!

After eating a couple of times, touring the ship and taking in a show, we come back to the cabin to sack out.  I'm not sure why we're so tired for having taken it easy today, but sleep is definitely in order.

25th Anniversary Trip, Day 1

Last night, after a long day of flying, we arrived in San Juan, Puerto Rico.  By midnight local time we were at our hotel in Old San Juan within the walls of the old fort El Morro.  Our hotel is The Gallery Inn, a group of 16th century townhouses that served as naval headquarters for a time around 300 years ago!

Our room at The Gallery Inn

After a short sleep we got up, had breakfast and took a cab to the airport to rent a car.  We drove to the radio telescope at Arecibo.  Very cool!  I've been waiting about 15 years to see it and I wasn't disappointed.  It's huge!

After leaving Arecibo we stopped for lunch at a local restaurant and I got to try Mofongo.  It's sort of a national dish here, but I either got a plain one or it was hyped too much on TV.  It consists of mashed plantain with chunks of plantain and is baked.  It's starchy and is a bit like dry mashed potatoes with a faint banana taste.  Don't get me wrong, it was good, just not as fantastic as people said.  The skirt steak that came with it was fantastic, though!

After lunch we cruised 100 kilometers to the far east end of the island to visit El Yunke, the only tropical rain forest in the U.S. National Park System.  It was gorgeous and was full of the sounds of birds and flowing/falling water.  I could have spent an entire day here just lying in a hammock and enjoying nature.

We turned in our car at about 9pm and went back to the Hotel for a quick swim before bed time.

Happy 25th Anniversary To My Dear Wife...

Here's a little somethin' I cooked up in Peg's favorite color to commemorate the occasion.  Of course, it's a little non-traditional, but what would you expect from a goofball like me?

I testify...

How I know the lowly, docile, easily domesticated bovine is a gift from Heaven:
  1. On January first, as usual, we roasted some prime rib of beef for family and friends: Pure ambrosia!
  2. Yesterday when I got up I stuck the leftover rib bones in the crock pot with a half gallon of BBQ sauce - and for supper: Pure sticky ambrosia!
  3. Every bit of meat is scrumptious, even the face, tongue and tail.
  4. There's a butt-load of leather on those suckers! (I need me some new cowboy boots!)
  5. Milk. And lots of it!
  6. The hooves: Pure stinky ambrosia! (Well, to our dogs, at least.)
  7. Their flatulence and droppings can be made into fertilizer or fuel. (If you want to.)
  8. They convert almost any kind of grass, grain or otherwise inedible plant material into everything above.
What more could you ask for? Thank you Heavenly Father.
